Offal is not awful! Preparing fried venison heart was a tradition at deer camp in Anneliese's family. Liver gets a bad wrap for its often bitter after taste and less than desirable looks, but it doesn't have to be that way! What's the trick? Soak the liver in milk for 2-3 hours.
Why does it work? Milk is full of calcium and a protein called Casein, which is a lipophilic protein (fat-loving/binding). If have drunk milk after spicy salsa to tone down the burn, or put milk in your coffee to temper the bitterness, then you've experienced the neutralizing power of milk. Milk works similarly when soaking aromatic meats such as liver and kidney, toning down their characteristic bitterness without sacrificing the nutrient density!

Before Covid I used to travel for work a good chunk of the summer and fall. One of my favorite things to find in the different cities last year was a Mediterranean restaurant because the food wasn't so heavy!
This uses a not so familiar spice - Za'atar. I found it at Target in the regular spice aisle. There are also recipes online to make your own with other spices. It was worth buying it, we have used it quite a few times since!

We love potstickers / dumplings, so I wanted to try to make our own! These were pretty good and making the filling was easy. I would suggest buying pre-made won ton wrappers if you don't have a hour to make your own dough! I didn't realize it would take so long to make the wrapper, oops!
