Copycat IKEA Swedish Meatballs
I can't get enough of the Swedish Meatballs every time we take that full day adventure out to IKEA. Last time we were there I picked up some of the lingonberry jam, so I just HAD to find a recipe to try to make the meatballs. This one did not disappoint Recipe courtesy of- https://flavorite.net/copycat-ikea-swedish-meatballs/

Gluten Free Na'an Bread
This has quickly become a household favorite. While we originally started making this recipe with Chicken Tikka Masala, we will often make it ahead to have as a quick snack on the go, or to have for breakfast with honey or stuffed with scrambled eggs. It's truly a versatile recipe!

Chicken Tikka Masala
Relatively quick, although pretty involved. While it takes a little more work than most of the recipes we post, it is well worth the effort! For a truly amazing experience, make with Na'an bread. We have a Gluten Free version on our website, but there are plenty of regular recipes online!

This teriyaki sauce would be great for stir fry as well! For another idea, you can use the teriyaki sauce basting quarters on the grill too.

Caprese Chicken & Quinoa
I love the flavors of Caprese - mozzarella, tomato, basil + balsamic. I saw a version of this recipe and had to try it. I'll be honest, I almost didn't post it because the color of the quinoa with sauce isn't very appetizing looking.... but it IS SO GOOD!!! If you can ignore the color of the quinoa and like caprese flavors, give this one a go! It's very filling due to the quinoa and one pan of this lasted us 3+ meals! I did not try freezing this one, but the original recipe says to freeze before the basil. Recipe based off of this one - https://www.eatyourselfskinny.com/cheesy-caprese-chicken-quinoa-casserole/

Easy Slow Cooker Chicken + Stock
Make your quarter chickens for eating or shredding, and then in the same pot using the chicken bones and skin, make your stock! If you have two slow cookers, you can fit 3 packages between two slow cookers. I like to make multiples at once to have shredded chicken for future recipes. You can also freeze shredded chicken, just make sure to mark how many cups it is for easy access. I'd suggest 3 cup packages.

Slow Cooker Chicken Tortilla Soup
Nice easy slow cooker meal. Dump all of your ingredients in the crock pot and it's ready for dinner later! I had an extra half an onion and a green pepper from another recipe, so I through that in there as well. I also saved the cilantro for topping. I ran across salad topper tortilla strips at the store, so I topped with those. I would suggest using regular tortilla chips for more flavor.

Chicken Pot Pie
This is my all time favorite freezer meal. I've probably made 4-5 rounds of this over the past few years. Each recipe makes 3-4 pies, and I suggest not doubling the recipe unless you have a large soup pot. I've made the mistake before and had to split everything into bowls because my large pot wasn't big enough! We also usually just make this with a top crust instead of bottom and top. This can also be made gluten free by subbing corn starch for flour as the thickening ingredient, and either using no crust or a gluten free crust. It's still just as good!

Baked Penne with Chicken and Sun Dried Tomatoes
Another perfect meal for tonight + one to freeze for later! This one makes 2 2-quart baking dishes. We usually divide it between 3 pans for 2-3 servings each. Great for leftover chicken or shredded quarters. Recipe adapted from - https://www.marthastewart.com/313371/baked-penne-with-chicken-and-sun-dried-t
