Sausage and Pepper Hot Pockets
I was trying to come up with things for the freezer that I could have for easy lunches, and found homemade hot pockets. Freezer to plate in 90 seconds! I don't know how long they are going to last in the freezer, I keep eating them! They are so much tastier and heartier than the pre-made ones. I did two variations, this recipe is for an Italian Sausage & Peppers pocket, and I also did a pizza version with Italian sausage and pepperoni, cheese, and sauce. Caprese Chicken & Quinoa
I love the flavors of Caprese - mozzarella, tomato, basil + balsamic. I saw a version of this recipe and had to try it. I'll be honest, I almost didn't post it because the color of the quinoa with sauce isn't very appetizing looking.... but it IS SO GOOD!!! If you can ignore the color of the quinoa and like caprese flavors, give this one a go! It's very filling due to the quinoa and one pan of this lasted us 3+ meals! Easy Slow Cooker Chicken + Stock
Make your quarter chickens for eating or shredding, and then in the same pot using the chicken bones and skin, make your stock! If you have two slow cookers, you can fit 3 packages between two slow cookers. I like to make multiples at once to have shredded chicken for future recipes. You can also freeze shredded chicken, just make sure to mark how many cups it is for easy access. I'd suggest 3 cup packages.
