Nice easy slow cooker meal. Dump all of your ingredients in the crock pot and it's ready for dinner later! I had an extra half an onion and a green pepper from another recipe, so I through that in there as well. I also saved the cilantro for topping. I ran across salad topper tortilla strips at the store, so I topped with those. I would suggest using regular tortilla chips for more flavor.

This is my all time favorite freezer meal. I've probably made 4-5 rounds of this over the past few years. Each recipe makes 3-4 pies, and I suggest not doubling the recipe unless you have a large soup pot. I've made the mistake before and had to split everything into bowls because my large pot wasn't big enough! We also usually just make this with a top crust instead of bottom and top.
This can also be made gluten free by subbing corn starch for flour as the thickening ingredient, and either using no crust or a gluten free crust. It's still just as good!

Another perfect meal for tonight + one to freeze for later! This one makes 2 2-quart baking dishes. We usually divide it between 3 pans for 2-3 servings each. Great for leftover chicken or shredded quarters.

I love meals that make enough to freeze for later. This makes either 3 - 8x8 pans or 1 16x9 and 1 8x8 pan. Each 8x8 pan feeds about 3. As a family of 2 + a picky toddler an 8x8 pan was perfect with a little leftover for lunch. Plus, there's two more in the freezer for later!
As a bonus, this is gluten free.
Side note- Each 1/4 chicken package makes approximately 6-8 cups of chicken.

Ground beef doesn't always need to be made into a burger or taco meat. Here's another easy way to season ground beef to have with Quinoa, Rice or put it on the top of Cauliflower. Make it paleo but eliminating the brown sugar and using coconut aminos instead of soy sauce.

These burritos are a perfect solution for leftover chicken or shredded chicken. They're quick and easy and a little different than your typical burrito flavor.
