I'm just going to say it - Bone-in thighs are one of the least appreciated chicken cuts in the kitchen. Why? Dark meat is chock FULL of flavor, roast beautifully and that bone that people seem to fear actually seeps flavor from the precious marrow into the surrounding meat giving it even more flavor and decadence.
