Pork Teriyaki Meatballs

I love making 'meal delivery kit' knock off recipes. These recipes are full meals in one instead of just having a meat recipes, side, etc. They're usually pretty easy to make too! This one I adjusted with a homemade teriyaki sauce. 

Prep Time: 10 Minutes

Cook Time: 20 Minutes

Servings: 4 adults

Ingredients

  • (2 lbs) Ground Pork
  • (1) Zucchini
  • (2) Scallions
  • (1/2 cup) Panko Breadcrumbs
  • (1 Large Shredded) Carrots
  • (1.5 Cups) Jasmine Rice
  • (For garnish) Sesame Seeds
  • (To Taste) Siriacha
  • (2 Tbsp) Honey
  • (2 Tbsp) Rice Vinegar
  • (4 Tbsp) Soy Sauce
  • (1/2 tsp) Ginger
  • (2 Cloves minced) Garlic
  • (1/2 tsp) Pepper
  • Salt
  • Oil
  • (Squeeze plus more for garnish) Lime or Lime Juice
  • (1 Tbsp) Sesame Oil

Directions

Make your sauce -
Whisk together the honey, rice vinegar, soy sauce, ginger, garlic and pepper.  Set aside

Halve zucchini lengthwise and cut into half moons.  Mince ginger.  Slice up the scallions or green onions.

Make your meatballs - 
Combine pork, breadcrumbs, scallion whites and 2 TBSP of the teriyaki sauce.  Season with salt and pepper.  Shape into 1 inch balls

Cook rice according to package instructions

In a large pan head up oil and add zucchini and season with salt and pepper.  Cook until tender 4-6 minutes and then transfer to a medium sized bowl
In the same pan add carrots and season with salt and pepper.  Cook until tender 3-4 minutes and add to the bowl with zucchini and toss together with half of the sesame oil

In the same pan heat another drizzle of oil and cook meatballs until browned all over, 4-6 minutes.  Add remaining teriyaki sauce to the pan and bring to a simmer.  Reduce heat and cover.  Steam until the meatballs are cooked through to 165*, about 5 minutes.

To serve, place rice in a bowl and top with the zucchini mix and meatballs.  Drizzle with teriyaki sauce from the pan and siriacha to taste.  Garnish with sesame seeds, lime and the scallion greens.
