This is the perfect way to cook quarter chickens (or thighs) to eat or make into shredded chicken. Slow cooking them makes the meat very tender and fall of the bone. We like making this and eating the quarters as is the first night and then shredding the rest of the chicken to use in another recipe. Quarter chickens make the best shredded chicken. Each package of quarter chickens makes approx 6-8 cups of shredded chicken.

Ingredients
- (1 package) 1/4 Chicken
- (4) Carrots
- (1) Onion
- Olive Oil
- (3 Tablespoons) Lemon Juice
- (4 cloves) Garlic
- (1 sliced) Lemon
- Rosemary
- Thyme
- Salt & Pepper
Directions
Put potatoes, onions and carrots in the bottom of a slow cooker, mix in salt, pepper, half the garlic and half the thyme.
Rub salt and pepper on the quarter chickens and put in the slow cooker. Drizzle with olive oil, lemon juice, rest of garlic and herbs. Place the lemon slices on top.
Cook on high for 4 hours or on low for 8 hours. When the chicken is done it will be tender and fall off the bone.
Enjoy with the vegetables or cool the chicken down for shredding.
